I love to share my cooking process on my social media and anyone that follows me enjoys this content. I made a Shrimp Scampi dish for lunch one day and posted it to both my personal and business page on instagram and the comments and questions i received afterwards was overwhelming! I often get a lot of compliments on my decor, design aesthetic and cooking, and it really warms my heart how I seem to inspire and motivate others.
I decided to write a blog post on this recipe as I had a lot of requests for it on instagram and snapchat! If you make this dish and post content, tag me in it so I can show some love!
Approx. 30-35 Minutes
1 pound of Fresh Tiger Shrimp (Peeled)
2 Tablespoon of Olive oil
2 Tablespoon Of Unsalted Butter
5-6 Garlic Cloves (Chopped)
10 Ounces of Cherry and/or Grape Tomatoes
1/4 Cup Of Chicken Broth
Black Pepper & Salt
Capellini (Or spaghetti)
- Wash (also rinse with lemon juice), Peel and season shrimp with italian seasoning, chilli flakes and black pepper.
- Wash and cut the stems off the spinach and place in separate clean bowl.
- Wash and cut tomatoes in half and place in separate clean bowl.
- Cut Garlic cloves into fine dice sizes.
Pour the olive oil and butter in medium skillet on medium heat. Add garlic once pan is hot and saute for about 20-30 seconds. Do not burn!
Add in Chopped tomatoes and stir slowly cooking it until it loses its shape and becomes "squishy".
Pour in seasoned Shrimp and spinach and reduce heat slightly, constantly stirring and turning the mixture in the skillet.
After stirring the mix for about 5-10 minutes, add in your chicken broth.
In a separate pot, boil pasta in salted water with a dash of olive oil to keep from sticking. Once water comes to a boil add pasta.
Back to the pot of shrimp, garlic, tomatoes & spinach, now you sprinkle black pepper & salt as needed.
Allow the pot mixture to cook on medium heat for about 5-10 minutes, constantly stirring to avoid overcooking the shrimp and drying out the liquid. Reduce to low before adding over the pasta.
Once pasta is finished cooking, (capellini takes about 5 minutes or less) drain and add the pasta to the pot of shrimp and mix together. For more liquid, simply add more chicken broth.
- Use FRESH ingredients for the best taste and quality.
- Buy FRESH shrimp by the pound instead of bagged for best quality shrimp.
- 1 pound of shrimp usually contains 15-20 big pieces of shrimp.
- Use Extra Olive Virgin Oil and Block Unsalted Butter.
- Defrost shrimp by putting in COLD water in a clean silver bowl and wash and rinse with cold water and lemon juice.
